How it's made

Carema production follows DOC regulations. The wine must contain minimum 85% Nebbiolo (locally called Picotendro), with up to 15% other authorized red varieties. Harvest typically occurs in late October, when Nebbiolo has achieved optimal ripeness in the extreme high-altitude terraced vineyards. The grapes are harvested by hand from steep, terraced vineyards, then destemmed and crushed before transfer to fermentation vessels. Fermentation occurs at controlled temperatures (25-28°C) with extended maceration on skins for 15-20 days, extracting maximum color, tannin, and structure. The wine must age minimum 24 months before release (12 months in wood), with Riserva requiring 36 months minimum aging (18 months in wood). Traditional producers favor large Slavonian oak botti, while modernists may use French barriques. The wine must achieve minimum 12% alcohol and pass quality controls.
