Harvest typically occurs in late August to early September, when Brachetto has achieved optimal ripeness while maintaining acidity. The grapes are harvested by hand, then gently pressed to preserve aromatics. Fermentation occurs at low temperatures (14-16°C) to preserve aromatics, with producers using the Charmat method for light sparkle. The wine is typically stopped before full fermentation to retain natural sweetness, or sweetened after fermentation. The wine must achieve minimum 5% alcohol and maximum 12% alcohol, with residual sugar typically 50-120 g/L. The wine must pass quality controls.
