Puree of white peaches, essential for the Bellini.
The Bellini was created by Giuseppe Cipriani at Harry's Bar in Venice in 1948. He used white peaches, which were in season, and pureed them by hand to create the "sunset" color he admired in 15th-century Venetian paintings.
