The grapes are harvested by hand, then gently pressed before transfer to temperature-controlled fermentation vessels. Fermentation occurs at low temperatures (14-18°C) to preserve aromatics, typically in stainless steel tanks, though some producers use large oak botti. The wine must age minimum 3 months before release, with Superiore requiring 1 year minimum aging. The wine must achieve minimum 11.5% alcohol and pass quality controls.
