Trento production follows DOC regulations using the traditional method (metodo classico). The wine must be made from Chardonnay, Pinot Noir, and/or Pinot Blanc, with minimum 60% Chardonnay required for Riserva. Harvest typically occurs in late August to early September, when grapes have achieved optimal ripeness while maintaining high acidity. The grapes are harvested by hand, then gently pressed before transfer to temperature-controlled fermentation vessels. Primary fermentation occurs at low temperatures (14-18°C) to preserve aromatics, typically in stainless steel tanks. After primary fermentation, the wine undergoes secondary fermentation in the bottle (traditional method), where it ages on the lees for minimum 15 months (36 months for Riserva). The wine must achieve minimum 11.5% alcohol and pass quality controls. The wine's elegance and complexity come from the traditional method combined with Trentino's unique terroir—mountain altitude and cool climate—which creates base wines with high acidity and finesse.
