Strangozzi (also stringozzi) are hand-rolled flat pasta from Umbria, similar to thick, irregular tagliatelle, typically 3-5mm wide and 25-30cm long. Unlike most egg pasta, strangozzi are made with just flour and water, creating a rustic, artisan texture. These pasta are essential to Umbrian cuisine, traditionally served with black truffle, wild boar sauce, or simple tomato preparations.
Strangozzi originated in Umbria during medieval times, with strong associations to Central Italian peasant cuisine. The pasta's flour-and-water composition reflected agricultural availability in Umbria's rural areas, where eggs were valuable commodities reserved for special occasions.
