Soave's history begins in the Middle Ages when the Garganega grape was cultivated in the volcanic hills surrounding the medieval town of Soave, whose castle still dominates the landscape. The wine gained recognition in the 19th century when it was exported throughout Europe, establishing its reputation as one of Italy's finest white wines. The appellation received formal recognition in 1968 as DOC, then elevation to DOCG in 2001 for Soave Superiore, codifying the production zone and quality standards. Soave's distinctive character comes from the region's volcanic soils—basalt and tufa—which impart minerality and structure to the wine. The wine's international reputation grew in the 20th century, when it became one of Italy's most exported white wines, celebrated for its elegance and food compatibility. Today, Soave represents the finest expression of Garganega, with single-vineyard wines from the Classico zone showcasing the grape's capacity for complexity and aging.

Soave production follows strict DOCG regulations. The wine must contain minimum 70% Garganega, with up to 30% Trebbiano di Soave and/or Chardonnay. Harvest typically occurs in late September to early October, when Garganega has achieved optimal ripeness while retaining its characteristic high acidity. The grapes are harvested by hand, allowing for careful selection, then gently pressed to extract juice while minimizing skin contact. Fermentation occurs in stainless steel tanks at controlled temperatures (16-18°C), preserving the grape's delicate aromatics and fresh fruit character. Some producers employ partial barrel fermentation or aging in large neutral oak for complexity, though the finest examples balance oak influence with Garganega's essential freshness. Soave Superiore DOCG requires minimum 11% alcohol and must be aged minimum 8 months. The wine must pass quality controls. Soave can be released young for its fresh, crisp character, or aged for several years to develop complexity.
