Salice Salentino production follows DOC regulations. The wine must contain minimum 80% Negroamaro, with up to 20% Malvasia Nera and other authorized red varieties. Harvest typically occurs in late September to early October, when Negroamaro has achieved optimal ripeness. The grapes are harvested by hand, then destemmed and crushed before transfer to fermentation vessels. Fermentation occurs at controlled temperatures (25-28°C) with maceration on skins for 10-15 days, depending on the desired style. The wine must age minimum 1 year before release, with Riserva requiring 2 years minimum aging. Traditional producers favor large oak botti, while modernists may use stainless steel or French barriques. The wine must achieve minimum 12.5% alcohol and pass quality controls.
