DOP protected small salami from multiple Italian regions, traditionally made for hunters and travelers. Small-format dry-cured salami made from selected pork, heavily seasoned and aged for portability and intense flavor.
Hunters needed food that traveled well. So did soldiers, merchants, pilgrims. From this practical need emerged a category of salami that would become uniquely Italian: small-format, intensely seasoned, designed for portability. The name "alla cacciatora" (hunter's style) captures this origin perfectly. Renaissance records document these small salami being produced throughout Italy for military campaigns and long journeys. Regional variations developed—each area adding its own touches—but common characteristics remained: small size, bold seasoning, durability. By the 19th century, "cacciatora" salami had become recognized across Italy, their compact format making them ideal for sharing, gifting, carrying. The 1996 DOP designation protects production across multiple regions, acknowledging that while variations exist, these shared characteristics create a distinct category of Italian salami.
