Sicily adapts. In Sant'Angelo di Brolo, nestled in the Nebrodi Mountains, butchers learned to work with Mediterranean climate rather than against it. The mountains provide elevation, offering relief from coastal heat and creating microclimates where traditional salami production becomes possible. Medieval records document salami production here, but these weren't mainland techniques simply transplanted. Producers adapted, incorporating local herbs and spices that reflect Sicily's aromatic culinary character. Mountain pastures and coastal plains both influenced production, creating variations that speak to the island's diversity. The 1998 IGP designation protects Sant'Angelo di Brolo and surrounding Nebrodi areas, recognizing that Sicily's salami tradition, while drawing from mainland knowledge, has developed its own distinctive Mediterranean character.
