The "King of Radicchio," a stunningly beautiful chicory with deep violet leaves and pure white ribs, prized for its crisp texture and sophisticated bitter-sweet flavor.

Cultivated in the Veneto region since the 16th century, this winter flower owes its existence to a happy accident—or perhaps agronomic genius. Legend holds that a Belgian nurseryman named Francesco Van Den Borre brought bleaching techniques to Treviso in the 1860s. However, local tradition insists the technique was discovered when unsold chicory was left in a dark barn, sprouting sweet, white-ribbed hearts. It was the first Italian vegetable to receive IGP status.

Production is an art form involving "forzatura" (forcing). After harvest in late autumn, the plants are moved into dark, spring-water-fed tanks at 11°C. In this darkness, the plant re-awakens, consuming its chlorophyll (greenness) and fibrous outer leaves to produce the tender, vibrant violet-and-white heart. This process takes 15-20 days and requires manual grooming ("toelettatura") to reveal the jewel-like core.

In Treviso, the 'Mostra del Radicchio' is a major winter event. The vegetable is so revered that it has its own consortium and is protected by IGP status. It is traditionally grilled over vine cuttings.
