IGP protected smoked and dried meat product from Friuli-Venezia Giulia, made from mutton, goat, or sometimes pork, representing the region's mountain preservation tradition. Traditional preserved meat made from ground mutton, goat, or pork, shaped into patties, smoked, and air-dried, creating a distinctive mountain product.
Shape defines identity. In Friuli-Venezia Giulia's mountain valleys, "pitina" takes its name from local dialect, referring to the small patty form that distinguishes this product. Medieval records document pitina production here, with mountain communities developing methods for preserving mutton and goat meat using smoking and drying techniques adapted to alpine conditions. The practice of shaping ground meat into patties, then smoking and drying them, became particularly associated with Friuli's mountain communities, where these methods enabled preservation in challenging conditions. By the 19th century, Pitina had earned recognition throughout Friuli-Venezia Giulia for its distinctive character and mountain flavor. The 2010 IGP designation protects production across Friuli-Venezia Giulia, acknowledging that smoking plus drying creates characteristics that distinguish Pitina from all other Italian preserved meats.
