The pomace must be fresh—processed within 24-48 hours of pressing—and cannot be treated with preservatives or additives. Distillation occurs in traditional copper alembic stills (discontinuous method) or modern column stills, with the IG regulations requiring that the grappa retain the character of the source grapes. The spirit is distilled to a maximum of 86% ABV, then diluted to between 40-45% ABV for bottling. Some producers create aged expressions (vecchia, riserva) by maturing the grappa in wood—typically large Slavonian oak casks or French barriques—for extended periods, developing complexity and smoothness.
