Garganelli are hand-rolled ridged tubular pasta from Emilia-Romagna, particularly the Romagna region, approximately 4-5cm in length with distinctive diagonal ridges. These egg pasta tubes are made by rolling small squares of fresh pasta over a special ridged tool (pettine) while simultaneously rolling with a wooden dowel, creating the characteristic diagonal pattern.
Garganelli originated in Romagna during the 18th century, with legends attributing their invention to a cardinal's cook in Lugo. The distinctive diagonal ridging distinguished them from other tubular pastas.
