IGP protected Tuscan salami flavored with fennel seeds, known for its aromatic character and regional identity. Traditional dry-cured salami made from coarsely ground pork, seasoned with fennel seeds, garlic, and pepper.
The name tells the story: "finocchiona" derives from "finocchio," the Italian word for fennel. In Tuscany, this aromatic seed became so integral to salami that it gave the product its name. Medieval records hint at fennel's early use in Tuscan salumi, when the spice's availability and distinctive flavor made it a natural partner for preserved pork. Over centuries, the practice became inseparable from Tuscan identity. The region's bold, rustic culinary style found perfect expression in salami where fennel seeds—sometimes toasted to intensify their aroma—permeate every bite. By the 19th century, Finocchiona had become unmistakably Tuscan, its aromatic character as recognizable as Chianti or pecorino. The 2015 IGP designation protects production across Tuscany, acknowledging that Finocchiona's essence comes from both the fennel seasoning and the traditional methods preserved through generations.
