The name reveals everything: "cotica" means rind, and it's this humble ingredient that transforms ordinary sausage into something extraordinary. In Modena, where ancient trade routes brought spices from across Europe, medieval butchers developed methods for preserving pork that included the rind—a practice that would become central to Emilian New Year traditions. Those trade routes brought cinnamon, cloves, and nutmeg, spices that mingled with local wine and garlic to create cotechino's distinctive flavor profile. By the 18th century, cotechino had become inseparable from Emilian New Year celebrations, served with lentils to symbolize coins and prosperity. The tradition endures: families gather on December 31st, sharing cotechino and lentils as they welcome the new year. The 1998 IGP designation protects production across Emilia-Romagna, Lombardy, and Veneto, ensuring that industrial shortcuts don't compromise the traditional character that makes cotechino central to Italian holiday cuisine.
