Collio production follows DOC regulations. The wine can be made from various authorized white varieties, including Friulano, Ribolla Gialla, Malvasia Istriana, Pinot Grigio, Sauvignon Blanc, and Chardonnay. Harvest typically occurs in late August to early October, depending on the variety. The grapes are harvested by hand, then gently pressed before transfer to temperature-controlled fermentation vessels. Fermentation occurs at low temperatures (14-16°C) to preserve aromatics, with producers using stainless steel, neutral oak, or a combination. The wine must age minimum 3 months before release, with some producers aging longer for complexity. The wine must achieve minimum 11.5% alcohol and pass quality controls.
