Ciriole are thick hand-rolled spaghetti from Umbria, particularly traditional in Terni and surrounding areas, approximately 3-4mm in diameter. Similar to pici from Tuscany but distinctly Umbrian, ciriole are made with flour and water, hand-rolled to create substantial, irregular strands. The pasta's thickness and rustic texture make it ideal for robust sauces, particularly the traditional ciriole all'ternana with tomato, garlic, and peperoncino.
Ciriole originated in Terni, Umbria, with roots in medieval peasant cuisine. The pasta's development reflected the need for substantial, filling pasta that could be made with simple ingredients—flour and water. The hand-rolling technique, passed through generations of Terni home cooks, created the characteristic thick, irregular strands.
