Harvest typically occurs in late September to early October, when Cesanese has achieved optimal ripeness. The grapes are harvested by hand, then destemmed and crushed before transfer to fermentation vessels. Fermentation occurs at controlled temperatures (25-28°C) with maceration on skins for 10-15 days, preserving aromatic intensity. The wine must age minimum 1 year before release, with Riserva requiring 2 years minimum aging (12 months in wood). Traditional producers favor large Slavonian oak botti, while modernists may use French barriques. The wine must achieve minimum 12% alcohol (12.5% for Riserva) and pass quality controls.
