Bardolino production follows DOC regulations. The wine must contain minimum 35% Corvina and/or Corvinone, with up to 30% Rondinella and other authorized red varieties. Harvest typically occurs in late September to early October, when grapes have achieved optimal ripeness while maintaining freshness. The grapes are harvested by hand, then destemmed and crushed before transfer to fermentation vessels. Fermentation occurs at controlled temperatures (22-25°C) with shorter maceration on skins for 5-10 days, preserving freshness and lightness. The wine must age minimum 1 year before release, with Superiore requiring 1 year minimum aging. Traditional producers favor stainless steel, while some may use large oak botti. The wine must achieve minimum 10.5% alcohol (11% for Superiore) and pass quality controls.
