The grapes are harvested by hand, allowing for careful selection, then gently pressed to extract juice while preserving aromatics. The must undergoes a single fermentation in pressurized tanks using the Charmat method, where fermentation is stopped before all sugar is converted to alcohol, leaving residual sugar and creating gentle bubbles. This method preserves Moscato's fresh, aromatic character. The wine is then filtered, bottled under pressure, and released. Asti Spumante must achieve 7-9.5% alcohol and contain residual sugar, creating the wine's characteristic sweetness.
